Need Breakfast Help Please!

Hi Everyone,

 

I am on day 2 and I am having trouble finding breakfast options for myself.  I don't really like most meat, which is the most difficult part of the whole 30 for me (I tried once before and only made it 6 days).  I can already tell after 2 days that I will have an issue with breakfast.  I had eggs yesterday and this morning, but I know I can't eat eggs for 30 days (I can probably do every other day).  I have found several good looking non-egg non-meat breakfast options but none contain enough protein or they contain eggs in a way I don't think we should be eating them (mixed with a banana and cooked).  Can anyone offer any suggestions?  Thank you in advance!

You basically can eat anything for breakfast.  Please do not think that things need to be "breakfast food".  Leftovers for breakfast is fine. I like making a morning scramble (without eggs as I have issues with them myself) consisting of some sort of cooked seasoned ground meat (I cook it on the weekend) cooked cubed sweet potato (again pre cooked on the weekend) and handfuls of baby spinach (or baby kale, or collards - think leafy and green) and I cook everything together until greens are wilted.  Then I serve it with a large dollop of homemade mayo.

 

If that seems to heavy for you - I've noticed that fish works well on the days that I am just not feeling up for the above breakfast.  Salmon cakes are quite nice. And couple of weeks ago I was feeling very meh about all my usual favorites but was literally in the mood for leftover whiting (fish) and baby broccoli for breakfast.  My SO thought this was hilarious.  Me? - I just enjoyed it.  :) It's what I wanted.

This is a good salmon cake recipe, if you don't have one already. Or maybe there's enough veggies mixed in this pad thai that it wouldn't seem as heavy/meaty to you. Or look for veggie recipes that you love, that you can easily mix some leftover grilled chicken or some ground beef into, so the veggies stay the focus, but there's still meat in it.

My new breakfast favorite: fish (fresh if I have it or canned salmon, tuna, sardines) mixed with mayo and a chopped tomato or cucumber. Sometimes I throw in a chopped hard boiled egg. Sometimes I use half an avocado instead of mayo. Takes only five minutes to put together, minimum cleanup and cool and refreshing on these hot summer mornings. A template meal in one bowl.

One of my favorite breakfast options is to sauté kale, then throw some sautéed bell peppers and Aidell's chicken apple sausage on top! I make a big portion at the beginning of the week and just reheat for breakfast. If you're feeling up to eating eggs, add an over-easy or fried egg on top! Simple, quick and delicious! You may want to eat half an avocado on the side to make sure you're getting enough fat.

If you want something you can prep ahead of time to heat up for a quick breakfast, make some egg cups.  Basically scramble eggs and add anything you'd like... I usually add red bell peppers and scallions, but you can add another protein like sausage or ham plus any veggies that you like (spinach, asparagus, etc.).

 

I have a really good nonstick muffin pan that I use, and the egg cups slide right out.  You use a full dozen eggs... cook at 350 degrees for about 15-20 mins.

 

I typically top them with pico or salsa and sometimes olives.

What kind of meats/fish do you like? Do you have any objections to eating the same meat multiple times a day? You might try figuring out your favorite thing to eat, alternating that with eggs every other day, and switching up spices to keep things fresh.
