YES! Though I believe a fist-sized serving once a day is recommended as the maximum. Note that commercially-prepared potato chips are not okay regardless of what oil they are made with or what the ingredients list shows. You should also not be deep- or shallow-frying them at home.

 

They *are* delicious cut into 1/2 to 1-inch cube pieces, drizzled with olive oil, sprinkled with spices (salt, pepper, herbes de Provence is my favorite blend), and baked for a bit (I like mine browner, so I do 40 minutes at 450 degrees).

Almost exactly right.  The recommendation is to start with a fist sized serving once per day and go from there. Some people (very active people, people prone to depression or anxiety, women nearing their period etc) may need more.  And of course we would recommend that people switch up their starchy veggie and not rely solely on white potatoes.  :)
