Cooking fat - Getting technical

The rules say 1-2 servings of protein, veggies, then add fat in the recommended amount, for example oils and cooking fats. Does the coconut oil you use on the pan to cook your chicken, for example, count as the fat? If I add avocado to the side, would that count as two portions of fat? (Just curious about this technicality - I know that the meal I just laid out is compliant)
