I made a double batch of coconut curry grilled chicken from the whole 30 book ....Soooo good ! But I still have a cup of crushed tomatoes left. Looking for ideas? Thin it with some broth, add vegetables like mushrooms, carrots, celery, onions, garlic, or zucchini, put it all in the food processor or blender, maybe with some lemon or lime juice, and make a gazpacho-type soup you could have chilled or warm? (There's an actual gazpacho recipe here for reference. Just cut down the amounts and make a 1-2 serving size batch to use up your tomatoes, or add what you have left over into a bigger batch with some fresh tomatoes.)
