jakeya16
I'm starting my very first W30 on Monday the 14th and since I have to work the weekend I did my shopping today. I promised myself I'd take chances and try new fruits and vegetables to try and get the most out of my experience. I bought a spaghetti squash and asparagus, neither of which I've ever had before. I think the squash will be pretty easy to prepare but I'm completely lost when it comes to the asparagus. Any suggestions??
Moderators ShannonM816 Posted August 12, 2016 Moderators Share Posted August 12, 2016 If you have compliant bacon or prosciutto, try the bacon (or prosciutto) wrapped asparagus recipe on this page. In general, the easiest way to cook it is just to roast it. Obviously, don't use the parmesan listed in that, though the drizzle of balsamic vinegar would probably be tasty. jakeya16
Thank you! After 3 stores I was able to find compliant bacon! Checking ingredients is a real eye opener on its own.
GlennR
Since you're taking chances, how about experimenting and create your own asparagus spaghetti (maybe with garlic)? (ETA: And share the recipe if it's good!) You might also try a recipe I made for a Whole30 pancit (a Filipino noodle dish I adapted and made compliant). ashtangini
Gwyneth Palthrow's Asparagus Mimosa. It is phenomenal takes 10 mins to put together. I've made it 10x once for a brunch and it was a big hit. www.goop.com/recipes/asparagus-mimosa
