Carmexx Posted October 10, 2012 Share Posted October 10, 2012 I've been pretty much paleo for the last 2 years but this is my first time going strict paleo. This is a breakfast that I love to make, especially on chilly fall/winter mornings. It's just pumpkin (or other winter squash) mixed with egg whites and cinnamon and cooked like a pancake or nuked in the microwave. The texture in no way really resembles normal pancakes. Its just something warm and comforting on a cool morning. In the book under the exercise chapter it mentions eating pumpkin mixed with egg whites post-workout, so I assume this is okay... ? StuffIMakeMyHusband Posted October 11, 2012 Share Posted October 11, 2012 According to foodsubs.com, you can replace whole eggs with 1/4 cup egg white + 1 tsp oil for each egg...so you could get a more complete package of carbs/fat/protein by adding a little coconut oil or something. I remember Johnny saying not such great things happen when you don't use the entire egg. Egg white plus oil doesn't account for all the marvelous things hiding in the yolk. Alison Webster Posted October 14, 2012 Share Posted October 14, 2012 I mix up two eggs, pumpkin, ripe bananas dash of cinnamon and vanilla (optional not whole30 compliant).
