Coconut Milk

Are you missing drinking it, @merih or are you missing stirring some into your coffee etc?  We do not recommend that people drink any of their calories so drinking a glass of coconut or almond milk shouldn't be on your radar.

Looks like I'm going to have to try it in my coffee!  I should say though, that a big part of it for me is the presentation and context so if I'm having my coffee black I will present it to myself in a different cup, and a much smaller size - so in this case a tiny little Japanese handmade  tea cup or something equally delicate. I posted a pic of my breakfast this morning on twitter - @huemoreme, (it sorta shows the cup of coffee.  (Luckily for me, I'm not a sweet tooth so this is not a big stretch).

Reading directly from the sheet with the pictures of what our plate should have on it, on the While30 page, it says:

Add fat in the following recommended amounts "per" meal:

* coconut milk: between 1/4 and 1/2 of one(14 oz.) can

This can be used in coffee, in curry etc... You really wouldn't want to drink canned coconut milk, altho I guess you could.

What ladyshanny was referring to was that we don't want people drinking a glass of almond milk at each meal (like people do with regular milk). If you want your fat to be 1/2can of coconut milk drank straight with one meal, then go ahead, however I would strongly suggest you monitor your satiety signals when you do that because liquid foods digest faster than chewed foods so that fat might digest a bit faster than you want it to.

(I probably use about a 1/4 can of coconut milk in my coffee in the morning... I drink that in addition to eating a full template meal.

I've had a hard time finding coconut milk in the grocery store that doesn't contain a bunch of other stuff that I don't want (whole30 compliant or not) so my husband makes it.  

Take 2 cups of unsweetened, shredded, organic coconut, bring 4 cups of water almost to a boil.  Pour over the coconut in a big bowl and let it sit for 2 hours. After 2 hours put it all in the blender and blend it for 5 minutes.  Strain through a nut bag or coffee filter or fine sieve.  Done!  

It's yummy and there's absolutely nothing in it except coconut and water.  It lasts about a week in the refrigerator.

This sounds perfect. I have been looking for a coconut milk similar to what you would find in the refrigerated section without the junk in it to no avail. The canned coconut milk is good for cooking but the flavor isn't nice for other applications.
