My Favorite Breakfast

It takes a little work, but:

2 Poached Eggs (I use a stoneware microwave egg poacher that I got from Pampered Chef)

Serve over a bed of baby arugula or spinach, lightly dressed with a little oil and vinegar or lemon juice.

It makes me so happy that this is more than OK to eat on this plan!

I made the recipe in the whole 30 book " Poached eggs over Salmon with hollandaise sauce and it was wonderful. I also used my spirilizer and used sweet potatoes and then sprayed them with olive oil and baked them at 400 degrees.
