Piperanne Posted September 12, 2016 Share Posted September 12, 2016 Okay, so the last 11 days have not been a picnic in the park. Which is good as I don't like bugs. After the nausea, abdominal pain and diarrhea (sorry tmi), I seem to be getting back to normal. I continue to have migraines and am unable to work because the florescent lights in the office make my head scream. I decided to turn my kitchen into a test kitchen. If you have read any of my previous posts, you know, I do not like vegetables and have texture issues and miss diet coke terribly. After returning from work this morning, I wallowed in self pity and literally begged my significant other to "allow" me to have a diet coke...no one needs to know, it will be our little secret. I pouted, blaming all that ails me on one little diet coke missing from my diet. What does a fat girl do when she pouts? She goes grocery shopping. Wearing my sun glasses, I enter the store in search of things I like that are also Whole30 compliant. In an earlier post one of the moderators suggested Kombucha to assist with my diet coke withdrawal. I found a bottle and placed it in the the cart. You should also know, I do not like tea or coffee. I wandered the aisles reading lots of labels on various items. Earlier in the week I purchased a spaghetti squash, with the intention of making "spaghetti." I entered the aisle with the spaghetti/marinara sauces and began reading labels. Finally finding a compliant sauce, Newman's Own, Organic Tomato and Basil. I continued shopping, purchasing chicken for a roasted chicken recipe I had found and potatoes for roasted potatoes with parsley and fresh green beans. Home I went to open the "test kitchen." I pulled all fresh ingredients out of the fridge and stared at them....What am I going to do with all this? So, I began. I diced tomatoes and potatoes, chopped onions and jalapenos, sliced mushrooms, pressed garlic, trimmed rosemary and basil from the herb garden and began to throw things together. I made salsa, boiled potatoes to have on hand, placed the spaghetti squash in the oven, browned the ground beef added mushrooms, garlic, seasoning, and the jar of spaghetti sauce. I also seasoned pork tenderloin chops and placed them in a marinade and back into the fridge. Obviously, I am not going to eat this all at the same time, but it was time to do some taste tests. That is when it happened. That is when I died and went to heaven. The spaghetti sauce was heavenly, nothing against Newman's Own, but my additions sent it over the top. Do you recall the mention of spaghetti squash? I added a little bit of heaven on top of the squash and HAAALLLEEllluuujjjaaahhhh!!!! I didn't even realize I was eating a vegetable let alone squash.
