I'd say if you just did sweet potatoes or a mix of veggies, it'd be a little less SWYPO since it's not trying to replicate bread necessarily... but I have no idea. Even if it's just sweet potato cooked in a waffle iron. Mel Joulwan, creator of Well Fed series and personal friend of Melissa Hartwig had a sweet potato "waffle" in her second cookbook and it was ruled not Whole30 compliant. Not that it would affect me much since I think I've only used my waffle iron twice since receiving it as a lay wedding gift. It's just getting dust much like my toaster oven and juicer lol.
