ginsinnot Posted October 15, 2012 Share Posted October 15, 2012 Threw together a really great "jambalaya" this weekend and thought I'd share. 3 Andouille Sausage (watch out for sugar and other junk when you buy) 1/2 bag frozen shrimp (really, however much shrimp you want) 1 box Pomi chopped tomatoes (no added anything, just tomatoes in a BPA free box) 1 cup water 1 big sweet onion 10 or so white turnips 2-3 tsp diced garlic (I used the pre-chopped from the jar kind to save time) 1 tsp oregano 1 tsp paprika 1-2 tbsp ghee Started by cooking the onions in the ghee, when they were just about transclucent added in the turnips and the garlic. Sauteed a few minutes, then took out of the pan and put that mix into a bowl. Added the sausage (I remove the casing and crumble it in, you could chop in the casing if you want) and cooked til nice and browned, with the tasty brown stuff on the bottom of the pan. Then put the onion-turnip-garlic mix back in the pan. Added in the oregano and paprika. Then poured in the tomato and added the water to bring up the fluid level some. Last to go in was the shrimp, which we'd taken the tails off of. Brought the whole pot to a good boil, then reduced to low to simmer for about 30 minutes. If you like a bit more heat, could add 1/2 tsp cayenne We also had it over cooked turnip greens. Just washed, chopped up and into a pan to wilt with some of the jambalaya juice scooped in.
