Cauliflower Mash - too coconut-y

Hi - so tonight I made the cauliflower mash and I thought with the coconut milk it was too coconut tasting.  Two thing - - I mistakenly used coconut milk as opposed to coconut fat (what the recipe calls for) and also I don't really like the taste of coconut. I think I could really like this recipe but was wondering if there is another way to make it w/o the coconut.  Maybe use more chicken broth??

Thanks!

So I assume by coconut fat you mean coconut oil. You could sub any kind of oil or ghee for that. Coconut oil can taste a bit coconutty, but not nearly as much as coconut milk does, in my opinion, but you might prefer the taste of ghee in this instance, it would be a little more butter like.  I wouldn't add more broth unless you feel like it's too thick and you want it thinner.
