Olive oil vs. EVOO

Any olive oil is fine.  It's a flavor preference and some prefer using unrefined oils vs. refined oils.  I use a refined "light olive oil" in my mayo because I like the taste.  And use EVOO in my salad dressings and for topping cooked veggies.  Just be sure to check the labels because some "olive oil" will have other cheaper oils mixed in, yet the company still calls it "olive oil"
