Help me understand wine

I understand not being able to drink wine or any alcohol but I have a hard time understanding why we can't use it in cooking. After all, we can use vinegar (including balsamic, correct?) and balsamic has 5 grams of sugar per tablespoon. At least that's what's in the one I have at home.

In contrast, the amount of sugar in the same amount of wine is nominal. Depending on the wine you're using, some have almost no sugar. And since the alcohol cooks off, why can't we use wine in cooking?

I believe it's because ALL of the alcohol doesn't cook off, just most of it. I think this rule's on the same level as white potatoes in regards to arbitrariness, but it's 30 days. If you need an acid during the whole30, just go with vinegars.

As much as I love white wine and marsala sauces with my food, I am VERY rarely reaching for the wine bottle these days, just out of habit. There is no shortage of Paleo recipes out there that leave out the alcohol.
