Comforting Pork Stew

When shopping before Christmas, my grocery store had a pork shoulder marked down to half price; a deal I could not pass up! So I did pulled pork for Christmas Eve and made a tasty Pork Stew tonight.

Pork Stew

A few hours or the day before, roast a 3-5# Pork Shoulder for 5 hours at 325F

Let cool, then pull meat off bone (if there is one); reserve meat for pulled pork, and throw skin, fat and bone in the stock pot with some water. Cook for 2 hours or so. Chill, and skim off hardened fat. Reserve remaining broth.

For stew:

Saute aromatics in olive oil, coconut oil, or ghee:

1 onion, diced; 2 large carrots, diced; 3 stalks celery, diced

Add 3 potatoes, diced, and as much stock as you obtained from stock pot

Cook gently with some spices:

1 T. Turmeric

1 T. Garam Masala

1 T. Cumin

1 T. Pickled Jalapenos

2 T. Dried Bell Peppers if you have them (or more of fresh)

Salt and pepper to taste

2 T. Tomato Paste

When potatoes are tender, allow to cool until closer to serving time (to avoid overcooking veg)

Add generous amount of pulled pork, chopped to bite size

Reheat and salt if needed

You could add coconut milk to make a creamier soup and top with fresh cilantro
