Ideally, just do the eggs and fish for your protein, and then at the end of 30 days do your reintroductions to determine how you react to things like tofu or tempeh or other legumes. We've had pescatarians do Whole30 before, and even vegetarians who did 30 days with just eggs, so it is definitely doable. You might find this article helpful.
