"noodle" question

I think you might have a hard time with sweet potato noodles, they might get soft no matter how you cook them.  However, if you do try to cook them, it would not be for very long at all.  I find that sautéing noodles always makes them more mushy unless you really watch them closely, I would try roasting them very briefly.  However you cook them, make sure they are not overcrowded in the pan. Maybe put them in the fridge for awhile uncovered to dehydrate them a bit? I hope that helps.  Sounds interesting, let us know how it goes!

I did white sweet potato noodles last week, roasted with a little avocado oil... Was my first time so still getting the timing under control :)

Nom nom paleo also has a recipe for "swoodles" with bacon and she crisps them up into an amazing looking dish!
