LindsayO
Does anybody use coconut milk as a regular fat source? If my avocado isn't ripe yet (annoying), coconut milk is an easy go-to for me and seems to fill me up more than the other fat sources. Sometimes though, it fills me up a little more than I'd like and I get a heavy feeling, especially if I drink it by itself. What do you all do with it, besides put it in your coffee or tea? Do you ever just drink it by itself?
slc_melissa
Personally, I use it in curries and some soups. Also as part of a turmeric tea i like. I have heard of adding it to eggs in frittata and the like, but have not tried it. What about finding some unsweetened coconut flakes(try the baking aisle of a supermarket) they might fill you up before you get to the"heavy"phase. laura_juggles
I'm assuming you're talking about the canned kind because the ones in the carton are not a lot more than water and a little bit of coconut. The canned coconut milk makes wonderful creamy soups and sauces.
