substitutions in meat loaf

Yikes, don't use the coconut flour... coconut flour has been defatted which means that it is extremely absorbant... If you do need something for binding (which I don't use usually but some people do) almond flour is better...

I've been making a meatloaf with ground turkey, a package of chopped spinach (thawed and squeezed dry), and the other usual ingredients (egg and herbs and a little tomato paste), and it comes out very moist! I also saute the chopped onion before adding to the mixture because I don't like that raw onion taste.
