favorite make ahead meals?

Hello, I have done a Whole30 twice before (last one was almost a year ago) and my doctor recommended I follow a Paleo diet.  Her and her nurse swear by this, although she did say she still eats a bit of dairy here and there, so I guess she is more primal. I am thinking of transitioning to at a minimum a grain free/no sugar added lifestyle and my main goal is weight loss/maintenance.  Other than a reduction in bloating and that I wasn't hungry all the time, I did not notice any miracles on my first two Whole30s.  I think mainly this way of eating will help me not want to snack all the time.

I am starting on March 1 and my husband has agreed to do it with me this time (his first time).  Problem is, he works a lot of long/odd hours (I.T.!), and is going to school so virtually all the meal prep and shopping falls on me, especially when things like Whole30 rules are involved.  And we do tend to get bored easily.

So....I am looking for your favorite make-ahead recipes for breakfast, lunch and dinner. Or quick and easy recipes.  Eggs, grilled chicken and even grilled steak get old really quick.  :)

Make Ahead

Ethiopian stew (I use this as a pre-made veggie side to go with any meat, with compliant sausage it makes a great breakfast): http://nomnompaleo.com/post/97731264703/paleo-by-seasons-atkilt-spiced-ethiopian 

 

Quick and Easy

Chimichurri steak: chop cilantro, garlic, and jalapeno, mix with lime juice and coat flank steak. Cook flank steak under broiler.

Stir fry - any veggies, any chopped meat, coconut aminos, sesame oil and ginger sauteed. You can add zoodles or spaghetti squash for a lo mein type recipe.

Chili: veggies (I use carrots, zucchini, mushroom, and onions), canned tomatoes, ground beef (browned with onions) and chili powder (if you buy a store bought mix, check the label for sugar and MSG). I cook the beef and veggies in the bottom of the pot, then add the tomatoes and spices and cook until heated through.

I just made one of the easiest one-pan dinners ever:

Fresh beans, trimmed and cut into pieces

Chicken breasts, cut into thirds or quarters

Red or Yukon gold potatoes, cut into chunks

In a 9x13 pan, arrange a strip of green beans along one side, potatoes on the other side, and chicken breasts down the middle. Drizzle some extra virgin olive oil over the top and sprinkle with Italian herbs, salt and pepper. Cover with foil and bake at 350 for an hour.

Delicious and pretty enough for company!

Thanks, the chimichurri flank steak from Skinnytaste is one of our favorites and I know that it fits in with the Whole30 plan.  Stir fry veggies sounds good as well.

As for chili, I am debating whether I may need to try the AIP protocol to see if it helps my chronic pain (shoulder/neck).  Haven't decided yet.  Normally if I eat peppers or other night shades, they are cooked with the exception of tomatoes on a salad, so that should help.  My main goal with Whole30 is to get off the sugar bandwagon again, so I may try regular Whole30 first and as time progresses, try an AIP protocol.

I went and bought everything for those tuna cakes last night! I am going to make them today.  They sound very, um, interesting.   One of my very favorite Whole30 meals for bfast is Aidell's chicken apple sausage, granny apple and cubed sweet potato all sauteed with some cinnamon...I am wondering if eating that and the other together would be too much sweet potato in one day?

That probably would be a bit high on the starchy vegetables, it depends on how much sweet potato is in your breakfast. Maybe you could add some kale or other vegetables to the breakfast on the day you try the tuna cakes?
