I'm brand-new to Whole30 (on Day 1) and I thought I had done a great job planning everything out but then realized my plan to use avocado instead of mayo in a protein salad might not work. Can I use avocado or guacamole to hold a protein salad together instead of mayo? If you do, how do you stop the the guacamole from turning brown if it is mixed in with the other salad stuff? Might not be as creamy and maybe a bit more "chunky" but it'll be fine. Give a squeeze of an acid such as lime or lemon juice over the whole thing and stir that in. The brown is caused from oxidization. Citric acid inhibits browning as does putting a bit of plastic wrap right down on the surface of your salad and then covering with whatever lid you're using. sunnytropic Posted March 1, 2017 Share Posted March 1, 2017 Day 1 of my whole30 I had chicken salad made with avocado for lunch! I 2nd adding a hit of lemon or lime juice, if you are making in advance you can also put a layer of saran wrap and press it down so it sits pushed up against the top of the salad in your container before covering with the lid to help oxygen from getting in!
