Some people need more starch, particularly if they are prone to anxiety or are very active, some do better on less (sedentary or with blood sugar issues)..... I learned about them from early-life eating as they are a diner staple to serve with eggs (though honestly, I think diners are regional, but most restaurants here in the USA that serve breakfast have home fries alongside the eggs in their offerings). Lately I've been using my Cuisinart or box grater and doing my own hash browns, which are different from home fries, with grated onion and garlic added, sautéed with olive oil. Mmmmmmm.
