I followed the Salmon cakes recipe exactly EXCEPT I couldn't find canned sweet potatoes anywhere! I used baby food sweet potatoes. When finally done, mine were incredibly dry. What did I do wrong? Moderators ShannonM816 Posted April 17, 2017 Moderators Share Posted April 17, 2017 I would think baby food sweet potatoes would've worked, unless there just wasn't as much of them as there would've been of canned sweet potatoes or they were watered down or something. I usually just buy whole sweet potatoes and bake them, peel the skin off, and mash them up to use in the recipe, I know other people have used canned pumpkin (not pie filling, just pumpkin) as well. I have to admit, I've never made the recipe in the book, because I'd already found this one instead which I've always had good luck with -- you might compare the amount of sweet potato called for in the book recipe to it and see if they're the same, or if there's some other major difference between the two.
