I usually click to allow subs so that if they don't have the exact apples I want, they sub a similar kind or if they only have white yams and not orange, they'll sub. But then I can put a note in the comments "Please don't substitute the tomato paste or chicken stock" or whatever item you think might show up non-compliant.
