You can use a vegetable peeler to make wide, thin slices of zucchini, which aren't the same shape as zoodles done with a spiralizer, but would work. Or you can cut them into long, thin slices with a knife. Or you can always just use diced zucchini instead. With some vegetables, the shape and size are going to make a bigger difference in cooking time, like with sweet potatoes, the noodle shapes may cook faster than diced chunks, depending on the size you cut them and how youre cooking them, but with zucchini, it cooks so fast, it shouldn't make a huge difference in cook time what shape you cut it.
