I started the whole30 to heal some annoying digestive issues and to figure out which food(s) I'm sensitive to. I'm also reallllly hoping to lose my little round belly that never really left after my third baby was born. Yesterday was a day of lots of trial-and-error (when they say that extra virgin olive oil doesn't make a good mayo base, they aren't kidding - blech!) canned coconut milk and my new $16 Amazon immersion blender have been priceless. I'm hoping that I'm in a groove now. I love my immersion blender! I use avocado oil for mayo and that works well. I also make a chipotle mayo - I just add chipotle powder (from Sprout's if you have them, but I'm sure any brand will work fine) to the basic mayo recipe and it is fantastic.
