I was wondering if it's OK to deep fry (ie deep fry chicken covered in coconut flour) to make southern fried chicken. Ingredients wise I know it's fine, but is that against the spirit of the whole 30 (ie like using coconut flour to make pasteries which is frowned upon)? Robin Strathdee Posted November 19, 2012 Share Posted November 19, 2012 my first thought here is: that would be expensive chicken! Coconut oil is costly enough that it would be a no go for my budget. That said, if you want to give it a shot I suppose it's okay. If you're using it to cope with emotional stress or craving it something fierce, then back off a bit. While it might be compliant (and I've absolutely fried sweet potato fries and chips in coconut oil) most oils are damaged at high prolonged heats, even those that are more stable. You can do a more shallow quick pan fry to crisp and brown and then toss in the oven to finish as an alternative. Link to comment Share on other sites More sharing options...

Michaela Elmore Cogswell Posted December 3, 2012 Share Posted December 3, 2012 Another issue to consider is that you want to deep fry at 350F which is the smoke point for coconut oil, so I'd go with the shallow pan method to avoid a smokey house. Coconut oil will hit its flash point much quicker than most oils so use a thermometer in your oil and keep below 340 to be safe....wouldn't want southern fried house!!!
