Rebecca30 Posted November 30, 2012 Share Posted November 30, 2012 I use it in coffee, curries, soups and lately since I have been trying to use a HUGE can of leftover pumpkin, I have been pouring some coconut milk over some pumpkin and then heating it and sprinkling with pumpkin pie spice. Rachael2288 Posted November 30, 2012 Share Posted November 30, 2012 Drizzled over berries, cut up a pear or apple then sprinkle with cinnamon and nuke for 45 secs then drizzle coconut milk over that. Breezygoat Posted December 8, 2012 Share Posted December 8, 2012 My most recent use of coconut milk is part of recreating my mother's Chicken Divan recipe from when I was little. Shredded chicken, tons of steamed broccoli simmered together with W30 mayo and coconut milk (in a 1:2 ratio, roughly), a generous splash of chicken stock and lots of umami-rich seasoning (tomato paste, coconut aminos, thinly sliced mushrooms, etc.).
