I use it in coffee, curries, soups and lately since I have been trying to use a HUGE can of leftover pumpkin, I have been pouring some coconut milk over some pumpkin and then heating it and sprinkling with pumpkin pie spice. This is my carb "veggie" with my lunch. Sorta picks me up!

My most recent use of coconut milk is part of recreating my mother's Chicken Divan recipe from when I was little. Shredded chicken, tons of steamed broccoli simmered together with W30 mayo and coconut milk (in a 1:2 ratio, roughly), a generous splash of chicken stock and lots of umami-rich seasoning (tomato paste, coconut aminos, thinly sliced mushrooms, etc.). I season with smoked paprika, mustard powder, black pepper and a bit of salt.
