Nia Shanks' Easy Egg Casserole

Made this for breakfast and it came out awesome:


  • It doesn't say to grease the baking dish, but I did grease mine with a little coconut oil and it still stuck a little bit, so be sure to grease.
  • My eggs were really small, so I ended up using 13 instead of ten. I started with 10 and I just kept adding them to the baking dish until the level of eggs was about to the top of the veggie/sausage mix.
  • Mine was done to perfection after 30 minutes, and it was pretty darn yummy.
