Tami Collins Posted May 21, 2012 Share Posted May 21, 2012 Made this for breakfast and it came out awesome: http://www.niashanks.com/2012/03/easy-egg-casserole-recipe/ It doesn't say to grease the baking dish, but I did grease mine with a little coconut oil and it still stuck a little bit, so be sure to grease. My eggs were really small, so I ended up using 13 instead of ten. I started with 10 and I just kept adding them to the baking dish until the level of eggs was about to the top of the veggie/sausage mix.
