Nancy H. Posted December 12, 2012 Share Posted December 12, 2012 I bought 1/2 lb of cooked shrimp thinking the recipe I wanted to use it for called for cooked shrimp. However it called for raw shrimp. Does anyone have any suggestions for using these large cooked shrimp. I know I can use them is a salad , but I'm wondering what other ideas you might have. I like chopping them a bit, mix with mayo or salsa and wrap it in lettuce leaves. Adding sliced avocado makes it even better. Link to comment Share on other sites More sharing options...

I just cook the veggies and "rice" (cauliflower) then just throw the shrimp in at the end to get warm. I also make shrimp and spinach omlettes. It can basically be used in any recipe that calles for raw shrimp but instead of cooking it, cook everything else and just add it at the end to heat through. Rebecca30 Posted December 14, 2012 Share Posted December 14, 2012 I also accidentally bought cooked shrimp and I threw together something I am really proud of. Creamy Shrimp Puttanesca sauce on zucchini noodles! I heated some olive oil and added some garlic and red pepper flakes, tossed in some olives and capers and let the garlic toast a little. Then I added about 2 tablespoons of tomato paste. I let that cook a little to develop flavor and then deglazed the pan with some chicken stock. When the sauce is thickened, throw in some shrimp and some halved baby tomatoes and when the shrimp is warm add a splash of coconut milk and serve on the zucchini noodles!
