Cooked Shrimp

I bought 1/2 lb of cooked shrimp thinking the recipe I wanted to use it for called for cooked shrimp. However it called for raw shrimp.

Does anyone have any suggestions for using these large cooked shrimp.

I know I can use them is a salad , but I'm wondering what other ideas you might have.

I also accidentally bought cooked shrimp and I threw together something I am really proud of. Creamy Shrimp Puttanesca sauce on zucchini noodles! I heated some olive oil and added some garlic and red pepper flakes, tossed in some olives and capers and let the garlic toast a little. Then I added about 2 tablespoons of tomato paste. I let that cook a little to develop flavor and then deglazed the pan with some chicken stock. When the sauce is thickened, throw in some shrimp and some halved baby tomatoes and when the shrimp is warm add a splash of coconut milk and serve on the zucchini noodles! Hits all the bells, veggies, protein, fat, yum!
