(m)eat to live
Long story short, bad things happen to my lady cycle when I restrict carbs too much, and I have a really hard time eating enough green veggies to get enough calories and stay out of ketosis - I get full! I'm looking for suggestions of starchy vegetables other than sweet potatoes and winter squash. Sometimes I feel like I'm going to turn into a sweet potato, I have them so often! Do carrots count? Is a plantain a vegetable or a fruit? Are white potatoes strictly verboten forever, or are there healthier ways to eat them? Please give me your recipe ideas for delicious Whole30-friendly starchy side dishes! Thank you!
MJam
Plantains, carrots, parsnips, onions are surprising high in carbohydrates and beets, water chestnuts and sugar snap peas are some off the top of my head. I am not sure where plantain falls, be it a fruit or a veg.
Robin Strathdee
I think it's a fruit, but it tastes like a veg. A la tomatoes.

Kirsteen
I chop parsnips, carrots, beets, turnip, basically whatever root veg I get in my weekly organic delivery, toss them in coconut or olive oil or beef fat and roast them in the oven. I make a massive batch at a time and then just heat them with whatever else I'm having.
MJam
Husband just made Nomnom's beets and I *was* a beet hater but they are actually really good! Beets...who knew!
StuffIMakeMyHusband
Chestnuts have an insane amount of starch...way more than potatoes, even: http://www.twofoods.com/compare/query/Y2hlc3RudXRz/cG90YXRv
Susan W
I think the difference is that chestnuts are more of a condiment so much smaller amounts are used. People sit down to a big pile of potatoes but they most likely wouldn't do the same with chestnuts.

You've never had Nom Nom Paleo's grill-roasted chestnuts then I accidentally ate a pound of those...oops
Susan W
You've never had Nom Nom Paleo's grill-roasted chestnuts then I accidentally ate a pound of those...oops True, I have not but sounds like a no brakes food to me. I happily use them to add a little crunch to a stir fry.
