Feeling pretty disgusted!   Tried my first whole 30 4 years ago and had successfully kept 60 pounds off for almost 3.5 years!   Have kept to some of the basic principles, but have completely gone bizerk with sugar over the past 4 months.  I’ve gained 16 pounds in that short time!   Feel absolutely out of control, bloated, joint pain, and just GROSS.   had intent of starting January 1, but  think I might start today.    Does anyone ever start by fasting for a day or is that not recommended?

There's no reason that you should fast for a day. If you were fasting for religious reasons or something like that, that's okay, but physically there's not really any reason to fast. Just start eating your three template-based meals a day following the rules.
