coffee creamer substitute (allergic to coconuts)

You can make nut milk from any kind of nuts, it's not difficult, just Google it. Try cashew milk, or a mix of cashew and almond, or try some other nuts.

You could also try blending your coffee with ghee, either instead of or in addition to any nut milk you prefer -- the extra fat gives it a little more creamy feel. But you do have to blend it, not just stir it.
