Whole30 perishable food in carry on

I will be flying to a memorial service next week and I'm just finishing my Whole30, starting reintroduction. Has anyone tried those ice packs that you use for a sprained ankle as a coolant for a meal? The last time we flew through Texas we got stuck for long hours at the airport in Dallas. Just planning ahead and want to take real food with me, not bars or jerky. I figure the "ice packs" aren't really liquid until you activate them by hitting them on something to start the chemical reaction. I don't know if they would be too cold or how long they would last. I'm planning to pack a salad, dressing, HB eggs, veggie sticks and fruit. Any other ideas?

If what you're concerned about is the permissibility of the ice pack on a flight, that's outside the purview of this forum.  I don't think a cold pack would be too cold, they're generally used for picnics and the like but maybe there's info online about the brand and how long they'll last.
