Canned coconut milk

I read some of the thoughts on the separation of full fat coconut milk. I have recently been purchasing cans and refrigerating them for coconut yogurt but I’m getting a very hard WAX like seal on top. Even after thawing and reredrigerating I get a gritty texture.  It should have the creamy thickened white cream and then the water. But I’m getting this wax then some cream and then water. Anyone else have experience with this??

I think the wax is coconut oil... as far as gritty, not sure, some are better quality than others.... maybe try taking the lid off the 'water side' drain the water and then scoop out all the contents and blend with an immersion blender or magic bullet?
