Rice Wine Vinegar vs. Rice Vinegar

Trying to make the Sunshine Sauce from Well Fed. The recipe calls for "rice vinegar" which we cannot find in the store. Is this the same as "rice wine vinegar?" If not, is rice wine vinegar acceptable to use?

Also, any alternatives in general that we should consider if we can't find rice vinegar.

Make sure you check the label; there are seasoned rice wine vinegars which contain sugar.

Just to answer my own question above, when you need a small amount of rice vinegar, you can use coconut vinegar instead but you should cut the amount by 1/2. It may not always work but it worked like a charm for "Sunshine Sauce" (Well Fed pg. 45)

Maybe I need more food in me but how does oil replace vinegar? They aren't interchangeable in recipes. Coconut vinegar works though.

i just caught that... was eating some rice vinegar seasoned with garlic. i neglected to read the entire label in the store (as i read ALL vinegar was accepted). It has brown sugar in it.

maybe i'll try balsamic ???

You have to make sure you get unseasoned rice wine vinegar. With other vinegars, I have the best luck choosing organic vinegars. They most often are sulphite additive, sugar and caramel coloring free. :)
