Problem with Beans High Carbohydrate Content? What about high carbohydrate content in Potatoes?

In reading the section on beans, it sounds like one of the main issues (excluding the phytoestrogen hormones on Soy) is that the high carbohydrate content causes gut-disrupting bacteria to grow and produce gas. My question is why is the high fiber and carbohydrate content of potatoes any different?

Fruits and potatoes have a large degree of fiber and carbohydrates (potatoes more so on the starch front) but isn't the end-result the same? I would think if we are trying to reduce gut-disrupting bacteria, we'd need to remove potatoes and starchy fruit from the equation as well.
