Onion Lotus

Serves 1-2

One large Vidalia onion (or red onion, if you prefer)

Drizzle of olive oil

Drizzle of balsamic vinegar

Salt & pepper

 

Preheat oven to 425 degrees Fahrenheit.

Peel the outer layer of onion off.  Slice off a bit at the root to make the bottom of the onion flat. Then, carefully slice your onion into eight sections. Start by cutting the onion almost in half, but stop about 1/2 an inch before you cut all the way through. Then, cut that in half, making sure to stop slicing about 1/2 an inch from the bottom of the onion. Keep halving until you have eight sections. Then, drizzle with the oil and vinegar and sprinkle with salt and pepper. Roast on a greased baking sheet for 30 minutes. I wanted extra caramelization so I then broiled it for an additional 3 minutes.  When done, let rest a few minutes and drizzle extra balsamic vinegar if you wish. Serve whole for one person or cut off chunks for multiple people.
