I understand that a lot of prepackaged sausage links have sugar and preservatives.. but other than making my own links and breakfast sausage... how can I be sure that the sausage in the meat area is made without? Any suggestions?

You'd need to read the labels.  If it's a butcher style shop where the sausages are loose and the butcher packages them up for you, then ask them for the ingredients.

Jones brand is is widely available and has several compliant options. We really like the roll and uncooked pork sausage varieties. They also have chicken and turkey options as well as sugar free Canadian bacon. Don’t get the pre-cooked stuff; it’s not compliant and I find the texture unappealing. It’s usually found in the frozen meat section of your grocery store.
