HOWEVER, a lot of the recipes I'm seeing require coconut oil and I really hate coconut oil. For those of you who are like me, what do you use instead? It'll still be solid in a jar, but somewhere on the label it'll say "refined." For most cooking, olive oil or avocado oil or ghee will work. If you need something that stands up to higher temperatures, like if you're searing meat, then ghee or clarified butter, the refined coconut oil I mentioned above, or an animal-based fat like lard, tallow, duck fat, or chicken fat.
