Picky eater

My husband is having gastric bypass at the end of March the diet he has to follow 2 weeks prior is strict, to ease into he agreed to do the Whole 30. Problem he is a picky eater ( basically we eat the  same 4 things for dinner every week), it took me over an hour last night showing him recipes to finally get him to consistent to 3 Whole 30 recipes for dinner this week. It is going be lonnnng month (and serious test of our marriage).

All I can say is wow.....that is one heck of a story......

Anywho (just my two cents), have you gone over the (compliant) foods and base meals off of that? With the power of something like google, I'm sure you can do things like "tomato & spinach whole30 recipes" (for example) and find a lot of recipes.

He might be a good candidate for 'hidden vegetables' - pots of hearty soups and other dishes that have lots of veg blended in. Think compliant potato soup but with cauliflower added in, egg bakes (does he like eggs?) with grated veggies... Under "Resources" on this site there's a PDF for vegetarian Whole 30ers, and the Vegetarian section of this forum also has lots of good conversation - it might not be recent, but the old threads can still be really useful!

I don't know if it would work for him, but when I make creamy soups, I'll mix ground meat into them to get my protein. It's still noticeable but maybe it would be helpful? I usually just heat up a serving of meat and add it to a serving of soup, rather than making a whole thing of soup with meat in, just so i can still have the soup as a side if I'm having a different protein.

If hiding the texture of meat helps, something like these salmon patties might work:  http://meljoulwan.com/2014/11/10/oven-fried-salmon-cakes/ -- they do freeze well, so if you make them and he doesn't care for them, you can freeze them for yourself for times when you need something easy to fix.
