Brittany_Henley
Hey guys. I am needing help with finding easier meals to make during the week. I am currently on day 21 of my whole30... but I'm lacking inspiration. I bought two whole30 cook books and the recipes are great and delicious, but they are very time consuming. I work a M-F 6:45-5 job. I get home and typically make dinner and lunch for the next days (leftovers are my friends). The problem is that my family won't eat until 8 or 9 that evening. I want to make it a habit to have dinner closer to 6 or 7. Any help would be greatly appreciated!
Moderators ShannonM816 Posted April 1, 2019 Moderators Share Posted April 1, 2019 There's a description of batch cooking here, maybe some of the ideas here would be helpful: http://meljoulwan.com/2010/01/14/paleo-kitchen-the-method-behind-my-madness/ You could also look at slow cooker recipes that could cook all day while you're at work and be ready when you get home. And meals can be super simple too. I keep frozen burger patties on hand, and can cook them from frozen while I roast a bunch of vegetables. Or make up tuna salad with canned tuna, add it to a big salad (if your family isn't whole30, they could have sandwiches or wraps). Or breakfast for dinner -- take whatever veggies you have and make a hash, add bacon or sausage or that leftover chicken you need to use up, top with fried or poached eggs (like this, but not all their suggestions are whole30: https://www.google.com/amp/s/www.epicurious.com/expert-advice/how-to-make-breakfast-hash-without-a-recipe-article/amp)
