Moderators ShannonM816 5620 Posted April 4, 2019 Moderators Share Posted April 4, 2019 I don't remember it taking that long when I've made it, but I have seen recipes that say cook for an hour or 90 minutes. You don't have to cook it until it's brown for it to be edible or Whole30 compliant -- if you cook it until it separates, but doesn't brown, and then strain it, you've got clarified butter, and that is fine to use. Browning it changes the flavor, but it's the separation and straining that make it okay to use in Whole30. You might be able to turn your heat up a little bit to get it to brown faster, but if you try that you really want to keep an eye on it to be sure it doesn't burn. Link to post Share on other sites

If you do want it browned, you would continue to stir and cook after the second foaming but be very vigilant.
