I’m cooking the leg of lamb in the fancypants menu section of the whole 30 book. But the recipe is for bone in leg of lamb and I can only find boneless. My question is, what temperature does it need to be when it’s done? How can I be sure it’s done and not over or undercooked?

Some of the better cooking websites such as TheKitchn and FoodNetwork might also have some info on this.  We're great with Whole30 stuff but general cooking questions are often better found elsewhere :)
