Soft Stools Normal?

Hi all. It's Day 9 for me, and I've had soft stools for 5 days. Not having fun.

 

I'm a vegetarian (and not much into cooking) using nuts & eggs (up to 5/day) for proteins, eating lots of salad, blueberries and almond milk. The occasional can of tuna. My previous proteins were tofu and beans. 

 

Should I be concerned about the soft stools? The first 3 days were nearly diarrhea, which I'm wondering might be from the coconut milk I tried as a substitute.
