Breakfast Salad

A quick and easy side dish for breakfast:


1/2 half head of green leaf lettuce, chopped

1/2 cup of fresh spinach

1 apple, chopped into small bits

1/4 cup of pistachio nuts

1/8 cup of dried cranberries (Whole30 compliant)

1/2 cup of grape tomatoes, sliced in half

Dressing (as desired)

Mix everything together in a big bowl and toss with dressing and serve.

Dressing ideas: 1 tablespoon of fresh squeezed orange, lemon, or lime juice. 1 tablespoon of Whole30 compliant mayo mixed with 1 teaspoon balsamic vinegar, good quality olive oil.
