Felt the need to be creative today for my Sunday workday lunch, so (while at work) I chopped beautiful sweet and crispy gala apples, stirred them up, and chilled them in a travel bowl with shredded coconut and coconut milk to make cereal!  I love cereal for any meal along with my Bengal Spice hot tea ... feeling happy at the moment.
