Final Day of Whole30 - Breakfast of Champions

Finishing up the Whole30 with the BEST BREAKFAST EVER and wanted to share it with whoever stumbles across this post...

Breakfast of Champions (Skillet Hash)

Prep time 5 min

Cook time 25-30 min

Ingredients:

1 Whole Russet Potato (Medium)

1 C. Spinach

3 Humanely Raised Eggs

4 Pieces of Whole30 Compliant Bacon (you won't need to add salt to this recipe because the bacon is salty!)

1 tsp. EVOO

Kitchen Tools:

Skillet 

Knife 

Cutting Board

*Air Fryer (Optional, see tip)

Instructions:

  1. Wash potato & dice into small cubes
  2. Heat Olive Oil in skillet
  3. Place Diced Potatoes in skillet & cook until golden brown (25-30 minutes)
  4. Add in bacon & spinach. Cook until spinach has wilted.
  5. Add in 3 eggs & scramble around until cooked.
  6. Take skillet off heat and let cool (1-2 minutes)
  7. ENJOY!!!!

*Tip: You can also cook your potatoes in the air fryer instead of the skillet. Preheat the air fryer and cook at 400 degrees for 25-30 minutes. After 20 minutes: heat Olive Oil in skillet, add in bacon & spinach & cook until spinach has wilted. Add in 3 eggs & scramble around until cooked. Take potatoes out of air fryer and put them on a plate, then top with scrambled egg, spinach & bacon. ENJOY!!!
