Kaleena
Inventive Whole30'ers, what can I do with a can of pumpkin puree? I have a can lying around. Ideas? TIA!
Kim Christensen
I had some to use up the other day. I made salmon, pumpkin, coconut, kale curry soup and it was delicious.
Lisa@SwissPaleo
It's good mixed in with cauliflower mash.

sb323
Mix it with coconut milk for a smoothie, or run it through an ice cream maker!
Susan W
Mix it with coconut milk for a smoothie, or run it through an ice cream maker! While people have chosen to make smoothies and "ice cream" on this site lately, it isn't in the spirit of the W30.
TrayS
I had some to use up the other day. I made salmon, pumpkin, coconut, kale curry soup and it was delicious. Kim, do you have a recipe you would be willing to share??
sb323
I agree it's not in the spirit of the Whole30, but I think part of the issue is whether you think of it as "dessert" or "ice cream" versus a source of food when you're hungry. I'm not saying you can eat "paleo pancakes," but coconut milk + pumpkin can be filling on-the-go.
Renee McCarty
I actually love it just with a little coconut oil and cinnamon, heated. Tastes much like other winter squash to me... I had it for breakfast this morning!
EstherC
Inventive Whole30'ers, what can I do with a can of pumpkin puree? I have a can lying around. Ideas? TIA! I made the salmon cake recipe that calls for sweet potatoes. Instead I used the Libby's pumpkin puree. I subbed in unsweetened applesauce + sm. tsp of baking powder for the egg since I have an egg allergy. Really tasty and good on the go in the morning for breakfast. Renee McCarty
Good idea, EstherC! I have been wanting to make those salmon cakes, but didn't want to use up my sweet potatoes on them. I have lots of pumpkin in the cupboard, I buy it on sale whenever I see it.
Kaleena
Ooh I like the salmon cake idea. This will be my lunch. The mashed cauli and pumpkin have already been a hit too. Love this forum <
Melelina
I have been eating pumpkin puree cold, with some coconut milk drizzled on top. I also have a hard boiled egg for my protein. Very simple, soothing meal.
melody
I'm planning on trying this recipe if I can find compliant sausage: http://www.janssushibar.com/creamy-pumpkin-pasta/ And this one minus the sweetener (maybe add some meat instead?) for breakfast: http://www.brunchphilly.blogspot.com/2012/11/white-pumpkin-pie.html
Coffeeandshoes
It makes really good breakfast mixed with eggs, pumpkin pie spices and baked. Or a wonderful Soup. I'm going to try this pumpkin hummis today: http://blog.stuffimakemyhusband.com/2012/10/moroccan-spiced-pumpkin-hummus.html And I also make pumpkin smoothies, My day starts early two days a week, I leave the house at 6-do a hard workout at 6:30 and I need a little something in my stomach for workout fuel. (I use raw eggs and various things to make a smoothie, drink half before workout and half after)

Melelina
Does anyone know how to make a pumpkin dish with eggs that doesn't have milk in it? The link above has milk. I would like something I can make for an easy breakfast. (I am not very good at winging it.)
melody
You could probably mix pumpkin, egg, and spice together and bake. It would be thicker than with added milk, but could be good?
praxisproject
Melody - We don't get compliant sausage here at all, but I make a "breakfast sausage" from pork mince, lots of dried sage (enough so it goes a bit green lol) and a good few shakes of cayenne pepper (I like it spicy). It's good baked in egg cups or on it's own.
jknolmed21
I love autumn for the pumpkin spice flavors. Is there a coffee drink with pumpkin puree that I could make?

That sounds a lot like SWYPO to me, although there'd be nothing wrong with adding some ground cloves & spices to your coffee while it's brewing.... Moderators SugarcubeOD Posted August 8, 2015 Moderators Share Posted August 8, 2015 I love autumn for the pumpkin spice flavors. Is there a coffee drink with pumpkin puree that I could make? The drinks that people like in autumn are called 'pumpkin' but actually have no pumpkin in them. To make a spiced coffee, I do what JMCBN says and put compliant pumpkin pie spice (usually bought at Trader Joe's around October) in the grounds when I"m brewing. Serve with a dash of coconut milk. Yum! I think you would be disappointed with the pumpkin puree because pumpkin doesn't actually have the flavors most people are looking for... pumpkin pie filling does but that's waaaay off limits. Try the spices, it's really good!

I usually use freeze dried coffee (don't know why, but I like it better), so I will maybe blend it up with the spices and almond milk or something. Great idea!
